Of ribs & chicken

I have not cooked for some time. I made these simple dishes for dinner.
Bak Kut Teh!  Bought prime ribs as they were more meaty.  Added lots chinese mushrooms and cloves of garlic. Then threw everything into the huge pot together with the Bak Kut Teh spices, added dark soya sauce, light soya sauce, salt and a little oyster sauce.  It was cooked in one and a half hours. It was not bad the soup base, but personally I feel it was still not good enough. Need more practise.
Can't remember if this was the first time I cooked Prawn Paste Chicken (Har Jeong Gai). It was quite easy. Mixed the Prawn Paste powder with water and marinate the chicken wings beforehand and left for a while. Then just fry the chicken wings till golden brown. The prawn paste in the chicken was quite distinctive, and luckily it was not too salty. Not bad actually.

In any meal, I need my veggies, and these were one of my favourites. Overall, a satisfying home-cooked meal.

    BTC, I just heard from Jamie last nite, the lamas are coming back from India in 2 weeks. They had problem with visa due to H1N1 epidemic. Watch out for their program!

  5. Thanks. Stir frying veggies are simplest. Just chop some garlic or cut them into thin slices. Then add oil and wait till oil is hot and add garlic, fry a few seconds till garlic turns golden brown and then put in all the veggies. Start frying for a minute or two till veggies are half cooked, add in seasoning like a pinch of salt and a little water. I like to use mushroom oyster sauce instead of salt. In a jiffy they are done!

  6. Oh and just before the veggies are ready to be served, add a little corn flour with a little water in a small bowl (just a little water n flour) and mix them into a white liquid. Then it pour into the wok. This is to so call make the veggies more "smooth". Stir a few moments and immediately after, scoop up the cooked veggies.
