I miss cooking! So grilled fish for a start...

Nowadays my mom is doing the cooking at home, so everything is served. I do not need to lift a finger to prepare food. One of the evenings my hands were itchy, I was sick of outside food, as well as home-cooked Chinese dishes with rice. So I decided to put on the apron again.....

If you've been following my blog, you would know I am the impromptu cook, meaning I would find whatever ingredients we have in the fridge to decide what to cook. Whatever that is convenient, that I did not have to go out with extra effort to buy the stuff. These were what I found that evening....  big potatoes, cherry tomatoes, fish fillet, and baby shitake mushrooms... hmmm.....

I decided to grill everything. For the potatoes, I added some olive oil, black pepper, salt, and seasoning and wrapped each potato up in foil (so that it would not be too dry afterwards). For the cherry tomatoes, I used chopped garlic, oil, salt, sugar and wrapped them all up in a larger piece of foil. For the fillet, just some salt and pepper and a pinch of Cajun seasoning to marinate (hopefully, it would not be fishy). I decided to sauté my mushroom, so I cut them up in smaller pieces. 

I put in the wrapped up potatoes into the oven first, in high heat, as they needed about 35-40 minutes to cook. During the last 10 minutes or so, I put in the tomatoes wrapped in foil and pieces of fish fillet to grill simultaneously. After 5 minutes, I turned the fish fillet over the other side and cooked for another 5 minutes. In the meantime, I sauté the baby shitake mushrooms, with some chopped garlic, mushroom oyster sauce and a little water. And dinner was ready in a jiffy!

Here was my yummy dinner ! The tomatoes did not looked 'burnt' enough (probably because I wrapped them up in the foil and not opened) but they were bursting with juices. I topped the chopped garlic leftover in the foil on top of the tomatoes (my family is big on garlic).

The potatoes were done just right, topped with a wallop of butter, so soft and fluffy and not dry at all (thus the importance of adding oil and seasoning before that). The fish fillet was soft and thankfully very fragrant with its freshness. I love my saute mushrooms so much. Yummmssss....

I liked my grilled fish and potato and tomatoes so much that I used them for another meal, to cook spaghetti. Tadah.... my pasta sauce with saute chopped onions, cherry tomatoes and shitake mushroom.

 Did you think that was it? No, I grilled the fish fillet and this time it tasted even better.

AND.... how could I do without my favourite grilled potato, which the seasoning permeated thoroughly. So ended, I had a real sinful and filling dinner. Next time, I am going to try grilling chicken with my potatoes and mushrooms. Or maybe I will do a grilled skewer of chicken and seafood.
