Penang char kway teow

There is this stall in Upper Boon Keng Market that sells Penang Char Kway Teow. There is only one lady manning the stall and every time when we want to eat this, we have to be prepared to wait. She takes her own sweet time frying the Penang Char Kway Teow to perfection. Although I'm sure the real McCoy over in Penang must taste even better, this is quite good what we can get in Singapore.

The flat noodles she uses is the small kway teow. She adds beansprouts, little chives, egg, chinese sausages, 2 big fresh prawns and lots of pork lard. I must say it is quite delicious if you prefer savoury char kway teow to our local char kway teow which is black and sweetish. Squeeze some lime juice over it to make it less jelak (heavy).
