As I mentioned before, I'm not a cook and sometimes I am not consistent in cooking the same dish. And usually I do not have much time to explore new recipes. I just put together a few dishes, depending on what I can find in the fridge. So speed and easy-to-cook dishes are a priority to me. I was busy the past week, going out almost every evening to attend pujas for Lati Rinpoche's passing into Nirvana. So these dishes were what I came up with one of the days when the entire family were coming back for dinner.
This is a fish dish. Found some slices of fish, so I marinated them with seasoning powder, sesame oil, light soya sauce, pepper, and corn flour. Sometimes we use these fish slices to cook fish soup with rice. Other ingredients: Zucchini, carrots, chopped garlic.
Dish 1 - Sliced Fish with Zucchini and Carrots. It turned out to be soooo yummy, as I sauteed the garlic and then carrots, followed by zucchini and fish. I added oyster sauce and some white wine and the flavour came out instantly, an appetising colorful dish with milky gravy. Absolutely a new found taste I like!
I love potatoes, so decided on a primarily potato dish. Ingredients used: Potatoes, chinese mushroom (both cut into cubes) and little minced pork (marinated with cornflour, sesame oil, light soya sauce, pepper).
Dish 2 - Potatoes with Minced Pork Mushroom. An easy stir fry of chopped garlic, minced pork and chinese mushroom and potatoes, add water and left to simmer for 5 to 10 minutes, till potatoes are soft (without adding any condiments). The final touch was adding Teriyaki sauce and a pinch of salt. A simple dish but the gravy blew me away. Hehe... both above dishes were splendid to go with plain white rice.
Dish 3 - Pork Ribs Corn Soup. A big pot of soup is usually a must, and my family prefers soups that are parboiled for at least 3 hours or more. Ingredients used: Pork ribs, corn, red dates, radish, wolfberries, dried longans. Just add salt to taste.
Dish 4 - Chicken Nuggets! Once in a while, I will buy frozen breaded chicken nuggets and they are fried and done in 6 minutes. No fuss. Such an easy dish and my niece and nephew love them (me too!). I use Farmpride brand as they are not too salty nor flaky.
So here were my complete 3 dishes.... 三菜....
.... and soup 一汤!!!! It was a pity I was in such a hurry to go out of the house after dinner, so I just had a rushed albeit delish one. ;D
